Vinification Technique: The grapes are picked by hand in boxes. The thermo controlled fermentation takes a few days to extract all the polyphenolic potential of the grapes. The malolactic fermentation and the subsequent maturation are made in stainless steel tanks and big barrels. 

Temperature of Fermentation: 24-26°C

Fermentation Time: 10-15 days

Maturation: Lees in stainless steel tanks for 70 % of the mass, lees in oak barrels for 30 % of the mass 

Time of Bottling: In June of the year following the harvest

Alcohol Content: 14,5% vol

Ageing Potential: 8-10 years

Color: Ruby red with violet intense reflections

Aroma: Rich bouquet, Amarena cherry, in the end fine notes of mint

Taste: Smooth, long finish

Serving: With any kind of wild, spicy Sardinian pecorino
