The DOPFF family has been stablished in picturesque Riquewihr since 1574 and is one of the world's oldest family-owned wine company. Nowadays, DOPFF "Au Molin" is run by the 13th generation of the family.
Wines from the diamond shaped label range are made from grapes produced in the family vineyards or purchased from long term contracted grape growers in Riquewihr and surrounding villages.
The carefully hand picked grapes are collected in small "bottiches". They are rapidly taken to the press house for gentle pressing in modern pneumatic presses. After a natural decantation, the juice is transferred for fermentation into temperature controlled stainless steel tanks. A natural clarification throughout the winter will be followed by a light filtration before bottling in spring.
Pinot Blanc is a fresh, light, dry white wine with a smooth acidity.
Grape Varieties: PINOT BLANC and AUXERROIS
Appearance: Youthful in color, pale yellow with bright green reflections.
Nose: Fresh and lively with a bouquet of citrus and white flowers (apple blossom), a discreet fruitiness and a crisp acidity.
Taste: This Pinot Blanc is dry but smooth and easy to drink.
To Serve With: Serve it slightly chilled (10°C) with any kind of buffet. Ideal with fresh white asparagus, river fish or white meat (especially poultry with white wine and cream sauce) and all traditional starters from Alsace (onion tart, tart flambée, snails, frogs legs). For a change, try it with Japanese sushi or sashimi.
