History

DOPFF "Au Moulin" is the initiator of CREMANT D'ALSACE, AOC, flagship of know-how and experience gained since 1901.

"The CREMANT D'ALSACE CONTROLLED appellation" has been confirmed by the decree of 24 August 1976.

This CREMANT D'ALSACE is obtained by the direct pressing of the pinots noirs (grapes with black film, but white juice). Its quality is determined by the art of this pressing from selected grapes.

Vinification

Grape Varieties: 100% Pinot Noir.

Pressing: The grapes are carefully hand picked. At the press house the whole, uncrushed grapes are placed directly into pneumatic presses. Pressing is limited to give 100 liters of juice from 150kg of grapes (compared with 130kg of grapes for the still Alsace wines). The first fermentation takes place in temperature controlled stainless steel tanks. The rest of the winemaking process follows the traditional method. The second fermentation takes place in the bottle. Rumuage or riddling is made on computer programmed gyropalettes. Dégorgement (the removal of the yeast sediment) is made after approximately 24 months.

Character

Appearance: Light yellow color slightly salmon, fine bubbles with a thick and persistent corolla.

Nose & Taste: Expressive and elegant nose, floral notes and red fruits. Full-bodied attack, full-bodied wine, vinous and dry with a fine acidity. A crémant typed Pinot Noir with a lot of character.

To Serve With: As an aperitif or dessert wine.
